Quality Water Means Quality Life

1.2 billion people do not have access to clean water.
Help others avoid the choice between thirst or disease.

As we passed through the Ozark Mountains, among Missouri scenic rivers, we came to a gorgeous little spot called "Two Rivers." At this convergence of the Jacks Fork and Current rivers, the silt heavy rapids of the Current meet the clear calm of the Jacks Fork river and one can actually see the divide between the two. I couldn't help but think of the divide between our access to clean water and the lack thereof in the villages of rural Ghana.

Troy and I consume on average, about 12 to 20 (20 oz) bottles of water daily. That's 12 to 20 times per day that, unlike the people in rural Ghana, Troy and I avoid illness without even realizing it. Regardless of how many miles we ride, we have no doubt that stopping anywhere along the road for water will be easy and risk-free.

Plant-Based Yummies on the Road

In case you haven't read our welcome message, Troy and I are spreading the word about a really awesome way YOU and EVERYONE can contribute to health and sustainability. It all starts on your plate. Believe it or not, eating a plant-based diet is one of the biggest ways you can reduce greenhouse gas emissions, boost your body's immune system, lower your cholesterol, increase your intake of antioxidants, and decrease the waste of resources like water and land.

I'll provide more statistics soon, but below is a description of what Troy and I have taken to eating during our energy intensive ride. We feel great!

Snacks:
nuts nuts nuts!
peanut butter and jelly
dried and fresh fruit
cereal bars - check the ingredients, some off brand ones are plant-based
Luna cookies
fresh veggies - carrots, celery, tomatoes
wheat crackers - off brand ones we found are plant-based
bread and guacamole - check stores like Wal-Mart for fresh baked bread that is plant-based
chips and salsa
V8 juices
Tropicana all natural OJ
Naked Green Machine Drink

Dinners/Main Meals:
pasta
rice
multigrain pilafs
grilled up veggies - squash, onions, broccoli, tomatoes
spinach salads - when we can get fresh
Morningstar Farms Vegan Grillers or Mealstarters - when we can access these
Chili "dogs" - beans, peppers, and onions with taco seasoning in a hotdog bun

Fast food (sparingly) options:
Chipotle - veggie bowls
Burger King - Gardenburger (you can ask them to hold the mayo and put lots of veggies on it!)
pizza - often you can ask them what's in their dough and have them hold the cheese. Jalapenos make for a yummy zing!
